Heat oven at 180 (160 fan) gas mark 4.
Use a tin loaf. Grease the tin with butter.
Melt butter, sugar and vanilla essence in a saucepan on a low heat, stir continuously to ensure it doesn't burn.
Mash up the bananas with a fork and then add to the saucepan, stirring to mix it all in together.
Then add the remaining ingredients and carefully stir.
Cook in the oven for 30 minutes and then check if cooked by inserting a small sharp knife into the cake, if the knife is clean when it comes out, its cooked!
If it still has cake mixture on it, it needs more time. Return to the oven for five minutes, then test again with the knife. Keep repeating the process until the knife is clean.
Once the cake is cooked, remove from the oven and wait approximately five minutes before carefully removing the cake from the tin and placing the cake on a cooling rack for it to cool down.
Then eat and enjoy!
